LEMON CAKE WITH LEMON CREAM CHEESE FROSTING


This lemon cake with lemon cream cheese frosting has a soft cake crumb and delicious lemon flavor. The cream cheese frosting is smooth & creamy for the perfect pairing. 

INGREDIENTS:
LEMON CAKE
  • 2 1/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened to room temperature
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup sour cream, room temperature
  • 1/3 cup buttermilk (or regular milk)
  • 3 tablespoons lemon zest (freshly grated)
  • 1/4 cup fresh lemon juice (use 1/3 cup for a stronger lemon flavor)


CREAM CHEESE FROSTING
  • 1/2 cup unsalted butter, softened
  • 8 oz brick-style cream cheese, softened
  • 3 cups powdered sugar, sifted
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon salt, to taste
  • 1-2 teaspoons milk, as needed
