Grilled Chicken Blueberry Feta Salad with avocado, almonds, red onion, and a simple lemon poppy seed dressing is full of flavor and perfect for summertime.

INGREDIENTS:
FOR THE LEMON POPPY SEED DRESSING:
  • 1/3 cup extra virgin olive oil
  • 1/3 cup lemon juice
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon poppy seeds
  • 1/4 teaspoon Kosher salt
  • Freshly ground black pepper, to taste


FOR THE SALAD:
  • 4 boneless, skinless chicken breasts (about 1 pound)
  • 8 cups mixed salad greens
  • 1 cup blueberries
  • 1 large avocado, sliced
  • 1 cup almonds
  • 3/4 cup crumbled feta cheese
  • 1/2 large red onion, thinly sliced
